Meatless Mondays: Quesadillas

Easy and fast, quesadillas are a great vegetarian dish. They’re something we make when we don’t have any other ideas or are running low on ingredients.


  • Tortillas
  • Refried beans
  • Black beans
  • 1/2 red pepper, cut up
  • cheese, sliced/shredded
  • optional: olives, tofu (maybe?), onions, spinach, tomatoes
  1. Preheat a skillet to 250 degrees.
  2. Make your quesadilla
  3. Spread refried beans on half the tortilla.
  4. Lay cheese on the other half.
  5. Sprinkle beans and peppers on one side of the tortilla.
  6. Add whatever else you want to add.
  7. Fold tortilla in half.
  8. Spray pam onto skillet and place quesadilla on it.
  9. Flip quesadilla after about 3 or 4 minutes. (Before you flip, I suggest you spray a bit of pam on the tortilla, so it doesn’t stick and so it gets a bit crunchy)
  10. Let the other side cook for about 3 or 4 minutes. When cheese is melted and the insides are hot, serve!
