Meatless Monday: Salad – Late Edition

I know I’ve already talked about taco salad in my Meatless Monday segment, but I think salad is different enough to post on here.

It’s a pretty cheap meal (for two people) and it’s sooo easy to pull together that it’s a great “I don’t have time to make dinner” meal. We got enough stuff to make salad twice so I think it’s a great deal. And you get your veggies for the day, which everyone needs to eat more of.


  • Fresh spinach
  • Lettuce bag (or whatever kind of lettuce you want, chopped up)
  • Baby tomatoes
  • 2 carrots, chopped
  • 1/2 red pepper, chopped
  • Can of black beans, drained and washed (or your choice of beans)
  • Optional: can of corn
  • Dressing (I suggest ranch)
  1. Add ingredients to your bowl, as much as you want of everything. Add some dressing.

I think it would be good with croutons, but those usually aren’t that healthy so I haven’t bought any yet. Maybe next time!
