Meatless Monday: Scampi

2013-01-14 21.15.06I know that scampi usually has chicken in it, but it’s just as delicious without it! Another versatile dish as well, add whatever vegetables you like or have lying around.


  • Spaghetti, half a package
  • Alfredo sauce, 1 jar
  • 1 pepper, chopped
  • 1/4 to 1/2 onion, chopped (amount of onion is personal opinion, I don’t like loads of onions in my dishes)
  • 1 zucchini squash, chopped (optional)
  1. Cook spaghetti according to directions
  2. In a saucepan, saute the vegetables in a bit of oil until cooked. For me it takes about 5 minutes, I like my veggies slightly soft. I saute the peppers for 3 minutes then add the onions for another 2.
  3. Dump Alfredo sauce into saucepan and heat until it bubbles a bit.
  4. Pour sauce and veggies onto drained spaghetti and enjoy!

2013-01-14 21.14.47So easy and very quick. You can have this ready in less than 30 minutes. Serve with a side of cherry tomatoes or carrots and you’re good to go (or, in my case, avocado and crescent rolls)!
